Method
Prepare the Crust
PT10MPreheat oven to 350°F (175°C). In a medium bowl, mix the chocolate cookie crumbs and melted butter. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
Preheat Oven
PT0MReduce oven temperature to 325°F (163°C).
Beat Cream Cheese
PT2MIn a large bowl with an electric mixer, beat the softened cream cheese on medium speed until smooth and creamy, about 2 minutes. Add sugar and beat until well combined.
Add Sour Cream and Vanilla
PT1MAdd sour cream and vanilla extract; beat until incorporated.
Add Eggs
PT3MAdd eggs one at a time, beating on low speed just until blended after each addition. Overbeating can cause cracking.
Incorporate Chocolate
PT2MFold in the melted chocolate until fully incorporated, being careful not to overmix.
Assemble and Bake
PT65MPour the batter over the cooled crust. Smooth the top with a spatula. Place the springform pan in a larger roasting pan; add hot water until it comes about 1 inch up the sides of the pan. Bake for 60-70 minutes, until the edges are set but the center is slightly jiggly.
Cool Gradually
PT60MTurn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour. Then remove from the oven and cool completely on a rack.
Chill
PT4HCover and refrigerate for at least 4 hours, preferably overnight, before serving.
