About this dish

This coconut cream pie is a custardy, coconut-packed classic with a buttery crust, silky filling infused with real coconut, and a cloud of whipped cream on top. While blue cheese may be my first love, this sweet pie earns a permanent spot on my dessert table—especially with toasted coconut for crunch.

It's a make-ahead dream: the filling sets up beautifully overnight.

Method

1

Make the pie crust

PT45M

In a large bowl, whisk flour and sugar. Cut in cold butter with a pastry blender until pea-sized crumbs form. Add ice water a tablespoon at a time, tossing with a fork until dough holds together. Shape into a disk, wrap, and chill for 30 minutes.

2

Blind bake the crust

PT20M

Preheat oven to 375°F (190°C). Roll dough on a floured surface to fit a 9-inch pie dish. Transfer to dish, trim and crimp edges. Line with parchment and fill with pie weights. Bake for 15 minutes, remove weights and parchment, and bake 5 minutes more until golden. Cool completely.

3

Make the coconut custard

PT12M

In a medium saucepan, whisk together milk, coconut milk, egg yolks, cornstarch, sugar, and salt until smooth. Cook over medium heat, whisking constantly, until mixture thickens and bubbles, about 8–10 minutes. Remove from heat and stir in shredded coconut and vanilla.

4

Fill and chill the pie

PT4H

Pour the warm custard into the cooled crust. Press plastic wrap directly onto the surface to prevent a skin from forming. Refrigerate until fully set, at least 4 hours or overnight.

5

Whip the cream and finish

PT10M

Just before serving, whip heavy cream with powdered sugar until soft peaks form. Spread over the chilled pie. Garnish with toasted coconut flakes. Slice and serve cold.

Tips

  • To avoid a runny filling and ensure a clean slice, cook the custard until it's very thick—it should mound on the whisk, not drip off.
  • If you love coconut, toast extra flakes and fold some into the whipped cream for a double hit of texture and flavor.
  • A store-bought crust works fine when you're short on time, but blind-bake it first so it stays crisp under the custard., Chill the pie for at least 4 hours, overnight is even better and makes slicing neat and easy.

Serving suggestions

  • Serve chilled with a drizzle of dark chocolate or a sprinkle of cinnamon.
  • Pair with a cup of strong coffee or a small glass of aged rum.
  • Top with fresh berries for a tart contrast, if desired.
