Loaded Baked Potato
Original name: Baked Potato (Loaded)

About this dish
A loaded baked potato turns a humble russet into a full meal: blistered skin, a fluffy interior, and a generous tumble of cheddar, sour cream, bacon, and scallions. The trick is to bake the potatoes directly on the oven rack so the skins dry and crisp instead of steaming in foil.
This is American comfort food at its most practical, and it's endlessly adaptable—use what you have, pile it on, and call it dinner.

Method
Preheat and prep
5 minutesPreheat the oven to 425°F (220°C) with a rack in the center. Scrub the potatoes under cold water and pat them completely dry. Prick each potato several times with a fork so steam can escape.
Season the potatoes
3 minutesRub the potatoes all over with olive oil, then sprinkle with kosher salt and black pepper. Place them directly on the oven rack, spaced a few inches apart, with a sheet pan on the rack below to catch any drips.
Bake until tender
50 minutesBake for 45 to 55 minutes, turning once halfway through, until the skins are crisp and a fork slides easily into the center. The internal temperature should reach about 210°F (99°C).
Cook the bacon
10 minutesWhile the potatoes bake, cook the bacon in a skillet over medium heat until crisp, about 8 to 10 minutes. Transfer to a paper towel-lined plate, then crumble or chop into bite-size pieces.
Prep the toppings
5 minutesShred the cheddar if needed, slice the scallions, and set out the sour cream and butter so everything is ready when the potatoes come out.
Split and fluff
5 minutesLet the potatoes rest for 5 minutes, then split each one lengthwise with a knife. Push the ends toward the center to open it up, and fluff the interior with a fork. Add a pat of butter if using.
Load and serve
5 minutesPile on the cheddar, crumbled bacon, sour cream, and scallions. Return the loaded potatoes to the oven for 2 to 3 minutes if you want the cheese fully melted, then serve hot.

Tips
- Bake the potatoes directly on the oven rack rather than wrapping them in foil, the dry heat gives you a crisp, salty skin and a fluffy interior.
- Choose russet potatoes that are similar in size so they finish baking at the same time, and avoid potatoes with green patches or soft spots.
- For extra-crisp skin, brush the potatoes with a little more olive oil halfway through baking.
- If you want to make these ahead, bake the potatoes and cook the bacon up to three days in advance, then reheat the potatoes in a 400°F (200°C) oven for 15 minutes before loading.
Serving suggestions
- Serve with a simple green salad or steamed broccoli for a complete meal.
- Set out extra toppings like chives, pickled jalapeños, or a sprinkle of smoked paprika.
- Pair with a cold lager, a dry cider, or a light red like Beaujolais.
