Cream of Chicken Soup

About this dish
American cream of chicken soup is a comforting classic with roots in 20th-century kitchen shortcuts, where canned soup became a weeknight staple. This from-scratch version starts with chicken sautéed in a generous knob of butter, then builds flavor with aromatic onion and garlic, all-purpose flour, and a splash of sherry for depth.
A reach for heavy cream at the end yields a silky, velvety pot of soup—ready to serve as a creamy starter or a filling main dish.

Method
Sauté the chicken
12 minsIn a large stockpot or Dutch oven, melt unsalted butter over medium heat. Season the chicken thighs with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Add chicken to the pot and cook until browned on both sides and cooked through, about 6–8 minutes per side. The internal temperature should reach 74°C (165°F). Remove chicken to a plate and set aside. Do not clean the pot.
Soften aromatic vegetables
8 minsAdd diced onion, carrots, and celery to the same pot. Cook, stirring occasionally, until vegetables are softened and onion is translucent, about 6–8 minutes. Add minced garlic and cook for 1 minute until fragrant.
Make a roux
2 minsSprinkle all-purpose flour over the vegetables and stir to coat. Cook for 1–2 minutes, stirring constantly, to remove the raw flour taste. The mixture will look thick and pasty.
Deglaze and simmer
18 minsPour in the dry sherry (if using) and stir, scraping up any browned bits from the bottom of the pot. Let it bubble for 30 seconds. Gradually whisk in the chicken broth, ensuring no lumps form. Add dried thyme and the bay leaf. Bring to a boil, then reduce heat to low and simmer uncovered for 15 minutes, stirring occasionally.
Finish with cream and chicken
7 minsRemove the bay leaf. Shred or cut the cooked chicken into bite-sized pieces and return it to the pot. Stir in the heavy cream and simmer gently for 5 minutes until heated through. Do not boil after adding cream to prevent curdling.
Adjust seasoning and serve
2 minsTaste and adjust salt and pepper as needed. Ladle into bowls and garnish with chopped fresh parsley if desired. Serve hot with crusty bread or crackers.

Tips
- For an even richer flavor, substitute homemade chicken stock for store-bought broth and simmer a Parmesan rind in the pot during step 4, remove before adding the cream.
- If you prefer a thicker soup, mash a few of the cooked vegetables against the side of the pot or blend a ladleful of the soup and stir it back in before adding the chicken.
- Leftovers will keep in the refrigerator for up to 3 days. Reheat gently on the stovetop over low heat, adding a splash of broth or milk if the soup has thickened too much.
- Dried thyme and bay leaf are classic, but a pinch of poultry seasoning or a few sprigs of fresh dill make a fine variation depending on what's in your pantry.
Serving suggestions
- Serve this cream of chicken soup as a hearty main course with a side of crusty bread, oyster crackers, or a simple green salad. It also works beautifully as a first course before a lighter meal.
- For.
- For a complete comfort-food dinner, pair it with a grilled cheese sandwich or a warm biscuit.
