Method
Cook the Pasta
10 minBring a large pot of salted water to a boil. Add penne and cook according to package directions until al dente. Reserve 1/2 cup pasta water before draining.
Sauté Aromatics
6 minWhile pasta cooks, heat olive oil and butter in a large skillet over medium heat. Add finely chopped onion and cook until softened, about 5 minutes. Add minced garlic and red pepper flakes, cook for 1 minute more.
Add Tomato Paste and Vodka
4 minStir in tomato paste and cook for 2 minutes, stirring frequently. Pour in vodka and let it simmer for 1-2 minutes to cook off the alcohol.
Make the Cream Sauce
3 minReduce heat to low. Stir in heavy cream and Parmesan cheese until smooth. Season with salt and black pepper to taste. If sauce is too thick, add some reserved pasta water.
Combine and Serve
2 minAdd drained penne to the skillet and toss to coat evenly with sauce. Serve immediately, garnished with fresh basil if desired.
