Salads
Chicken Salad on Greens with Smoked Paprika Dressing
Original name: Chicken Salad on Greens

About this dish
A chicken salad built like a proper barbecue plate: poached chicken pulled while warm, tossed with a smoked paprika and cider dressing, and piled over cool, crisp greens. Chicken salad has been a fixture of American deli counters and church cookbooks for over a century, but the idea of serving it on a bed of lettuce instead of between bread is a modern, lighter move that keeps all of the flavor.
This version skips heavy mayo-heavy gloop in favor of a tangy, smoky vinaigrette that lets the chicken come through. It is the kind of lunch that feels like a Sunday side dish turned main event.

Method
Poach the chicken gently
5 minutesPlace the chicken breasts in a single layer in a saucepan and cover with cold water by about 1 inch (2.5 cm). Add the kosher salt, peppercorns, and bay leaf. Set over medium heat and bring to a bare simmer, then immediately reduce the heat to low so the water barely shimmers.
Cook until just done
12 to 15 minutesPoach the chicken at that gentle simmer until an instant-read thermometer inserted into the thickest part registers 165°F (74°C), about 12 to 15 minutes depending on thickness. Do not let the water boil hard, or the meat turns stringy.
Rest, then shred
5 minutesTransfer the chicken to a cutting board and let it rest for 5 minutes. Shred it with two forks into bite-sized pieces, or slice it into thin strips if you prefer a cleaner look.
Whisk the smoky dressing
3 minutesIn a large bowl, whisk together the smoked paprika, apple cider vinegar, Dijon mustard, and honey until smooth. Slowly stream in the olive oil while whisking constantly until the dressing is emulsified and slightly thickened. Season with a pinch of salt and a few grinds of black pepper.
Dress the chicken while warm
5 minutesAdd the warm shredded chicken to the bowl with the dressing and toss to coat. Let it sit for 5 minutes so the chicken soaks up the smoked paprika and vinegar instead of just sitting on the surface.
Toast the pecans
4 minutesWhile the chicken rests, warm a dry skillet over medium heat and toast the pecans, stirring often, until fragrant and lightly darkened, about 3 to 4 minutes. Chop roughly and set aside.
Build the greens
3 minutesSpread the mixed greens across a platter or divide among four shallow bowls. Scatter the cherry tomatoes and red onion over the top and season the greens lightly with salt and pepper.
Pile and finish
2 minutesSpoon the dressed chicken over the greens, letting some of the dressing run down into the leaves. Scatter the toasted pecans and parsley over the top and serve right away.

Tips
- Poach the chicken gently rather than boiling it, because a hard boil tightens the muscle fibers and gives you dry, stringy meat instead of tender shreds.
- Dress the chicken while it is still warm so the smoked paprika and cider vinegar soak into the meat rather than sliding off the surface.
- If you are making this ahead for meal prep, keep the dressing, greens, and chicken stored separately and assemble just before eating so the greens stay crisp.
- Toasting the pecans in a dry skillet for a few minutes wakes up their oils and adds a nutty crunch that balances the smoky, tangy dressing.
Serving suggestions
- Serve as a light lunch with a slice of buttered cornbread or a warm flour tortilla on the side.
- Pair with a glass of unsweetened iced tea or a crisp, dry rosé.
- Turn it into a heartier plate by adding a scoop of charro beans or a few slices of grilled summer squash.
- For a picnic version, pack the dressed chicken and greens separately and toss together on site.
