Method
Cook pasta
PT10MBring a large pot of salted water to a boil. Cook rotini according to package directions until al dente. Drain, rinse under cold water, and drain well.
Chop vegetables
PT10MWhile pasta cooks, halve cherry tomatoes, chop bell pepper, dice cucumber, slice olives and red onion.
Make vinaigrette
PT3MIn a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, oregano, salt, pepper, and sugar (if using) until emulsified.
Combine salad
PT3MIn a large bowl, combine cooked pasta, chopped vegetables, olives, and parsley. Pour vinaigrette over and toss until well coated.
Chill and serve
