Method
Preheat the Oven
5 minsPreheat your oven to 350°F (177°C). Grease a 9x5-inch loaf pan.
Mix Dry Ingredients
5 minsIn a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
Combine Wet Ingredients
3 minsIn a large bowl, beat together the eggs, sugars, and oil. Add the vanilla and mix until well combined.
Fold in Zucchini
Stir the shredded zucchini into the wet mixture.
Combine Baking Mixtures
5 minsGradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
Bake
55 minsPour the batter into the prepared loaf pan. Bake from 50 to 60 minutes, until a toothpick inserted in the center comes out clean.
Cool Completely
15 minsCool the bread on a wire rack before sling.
