About this dish
A fragrant infusion of lemon balm and black tea, the way Georgians love it—bright, calming, and meant to be shared with dear friends. My mama always says, 'If there's tea, there's love,' and this steeped lemon balm tea is just that, in a tall glass.
Ingredients

liquid1.5 liters
Imperial measurement: 6 ⅓ cups
loose black tea
other2 tablespoons (about 6 g)
Imperial measurement: 4–6 teaspoons
fresh lemon balm leaves (roughly chopped)
herb1 generous handful (about 6–8 g)
Imperial measurement: ½ cup lightly packed
honey (preferably chestnut or wildflower)
other2–3 tablespoons (to taste)

Method
Boil and Pre-Warm
1 minuteBring water to a rolling boil. Rinse your teapot with hot water to warm it so your tea stays piping hot.
