Jamaican Fried Rice with Vegetables and Meat

About this dish
Jamaican fried rice is the weeknight hero that shows up on dinner tables from Portmore to Negril, built on day-old rice that soaks up every bit of soy, garlic, and thyme. This version loads the pan with seasoned chicken, sweet bell peppers, and garden peas, giving you a one-skillet meal with real island backbone.
The trick is cooking the rice cold and drying the meat well so nothing steams, only sears and glistens. Finish with a fried egg on top if you like and a restrained dash of Scotch bonnet pepper sauce—because flavor should bloom, not overpower.
Even picky eaters get a plate they'll ask for again.

Method
Season the chicken
PT5MPat the diced chicken thighs dry with paper towels. Put them in a bowl and toss with 1 tablespoon soy sauce, 1 clove minced garlic, the grated ginger, thyme, 1/4 teaspoon salt, and black pepper.
Ready the rice and vegetables
PT5MUse your fingers to break up any clumps in the chilled rice until the grains separate. Keep the diced onion, bell peppers, remaining garlic, and sliced scallions close to the stove, since this dish cooks quickly.
Sear the chicken
PT5MSet a wok or large skillet over medium-high heat and add 1 tablespoon oil. Once it shimmers, add the chicken in a single layer and cook without moving until nicely browned on one side, about 3 minutes. Stir and cook 2 minutes more until just cooked through. Transfer to a plate.
Scramble the eggs (optional)
PT2MLower the heat to medium, add 1 teaspoon oil to the pan, then pour in the beaten eggs. Let set for 20 seconds, then scramble gently into large soft curds. Slide the eggs onto the plate with the chicken.
Build the base
PT3MIncrease the heat to high and add the remaining 1 tablespoon oil. Add the onion and bell peppers and stir-fry for 1 to 2 minutes until they begin to soften but stay somewhat crisp. Add the remaining garlic and cook for 30 seconds until fragrant.
Fry the rice
PT3MAdd the rice and toss constantly for 2 to 3 minutes until every grain is hot and lightly toasted. Pour in the remaining soy sauce and ketchup (if using), and stir well so the rice turns an even golden brown.
Finish with peas, chicken, and eggs
PT3MStir in the peas, then return the chicken and eggs to the pan. Toss for 2 minutes to heat everything through, breaking up the egg a bit. Taste and add the Scotch bonnet sauce, sesame oil, and more salt only if needed.
Serve hot
PT1MTurn off the heat, fold in the scallions, and serve immediately, with extra pepper sauce on the side. A squeeze of lime or a lime wedge cuts through the richness.

Tips
- Cold, dry rice is the whole game—freshly cooked rice traps steam and turns gluey, so spread it on a tray and chill it for at least an hour before frying.
- Get your pan properly hot before the rice goes in, if the grains don't sizzle when they hit, take them out and heat the pan longer.
- If you want the heat to build gradually, add the Scotch bonnet sauce one teaspoon at a time at the end, stirring and tasting as you go, rather than dumping it in earlier.
- The cooking goes fast, so have every ingredient chopped and within arm's reach before you turn on the burner.
Serving suggestions
- Serve in warm bowls with lime wedges, extra pepper sauce on the side, and a simple cucumber-tomato salad or sliced avocado for balance. Cold sorrel or lemonade works well alongside for anyone skipping the heat.
