About this dish

This Jamaican-style peanut cake is a dense, nutrient-packed treat that combines the deep, toasty flavor of peanuts with the natural sweetness of raisins. It’s a beloved snack across the Caribbean, often enjoyed with a cup of tea or coffee.

The secret is toasting the peanuts just until they release their oil—that’s where the real flavor lives. Whether you call it a cake, a bar, or a candy, this version is sweet, satisfying, and remarkably easy to make at home.

Method

1

Toast the peanuts

10 minutes

Spread the peanuts evenly on a baking sheet and toast in a preheated 175°C (350°F) oven for 8-10 minutes, stirring halfway, until fragrant and slightly darker. Set aside to cool completely. Once cool, rub them in a clean kitchen towel to remove any loose skins.

2

Prep the pan and oven

5 minutes

Lower the oven to 160°C (325°F). Grease an 8-inch (20 cm) square baking pan and line with parchment paper, leaving overhang on two sides for easy removal.

3

Pulse the peanuts

5 minutes

Place the cooled peanuts in a food processor and pulse until coarsely chopped, with a mix of fine pieces and small chunks. Transfer to a bowl.

4

Cream the butter and sugar

5 minutes

In a large mixing bowl, beat the softened butter and brown sugar until light and creamy, about 2-3 minutes. Add the eggs one at a time, beating well after each. Mix in the vanilla extract.

5

Combine the mixture

5 minutes

In a separate bowl, whisk together the flour, baking powder, cinnamon (if using), and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chopped peanuts and raisins with a spatula until evenly distributed.

6

Bake

30 minutes

Spread the batter into the prepared pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean. The top should be golden brown.

7

Cool and slice

20 minutes

Let the cake cool in the pan for 10 minutes, then use the parchment to lift it out onto a wire rack to cool completely. Once cool, cut into 12 squares.

Tips

  • For a richer toasty flavor, don't skip the blanched-towel rub after toasting—it helps remove the bitter skins.
  • You can use salted peanuts if that's all you have, just reduce the added salt to an eighth of a teaspoon., Let the cake cool completely before slicing, using a serrated knife yields cleaner cuts.
  • These peanut cakes make a thoughtful edible gift when wrapped in parchment and tied with kitchen twine.

Serving suggestions

  • Serve with a hot cup of Caribbean Blue Mountain coffee or a cold glass of ginger beer for a truly authentic snack experience.
