Method
Preheat and prepare
10 minsPreheat oven to 160°C (325°F). Grease a 22 cm (9-inch) springform pan with melted butter or line with parchment paper.
Make the filling
10 minsIn a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth. Add the sweetened condensed milk and mix well. Add eggs one at a time, beating well after each addition. Mix in the coconut extract, vanilla extract, and shredded coconut until just combined.
Bake
60 minsPour the mixture into prepared pan. Bake for about 60 minutes, until the edges are set and the center barely jiggles. Allow to cool in the oven with the door slightly ajar for 1 hour, then refrigerate for at least 2 hours.
Top and serve
5 minsBefore serving, toast additional coconut flakes in a dry skillet until golden. Sprinkle over the top and slice.
