About this dish

Torta de yuca is a beloved Cuban cake made from cassava (yuca) and typically flavored with citrus and anise. This version adds a bright, citrusy note with lime zest and a hint of anise seed, creating a moist, dense cake with a tender crumb.

Perfect for any occasion, from afternoon coffee to holiday gatherings. The natural sweetness of the cassava pairs beautifully with the zing of lime, making it a uniquely Cuban treat that's simple to prepare and impossible to resist.

Method

1

Preheat and prepare

PT5M

Preheat your oven to 175°C (350°F). Grease a 9-inch (23 cm) round or square baking dish with butter or non-stick spray, and lightly dust with flour if desired.

2

Grate the cassava

PT15M

If using fresh cassava, peel it, remove the fibrous core, and finely grate the flesh. If using frozen cassava, thaw and squeeze out excess moisture, then grate. You should have about 900 g (2 lb) of grated cassava. Place it in a large mixing bowl.

3

Mix wet ingredients

PT5M

In a separate bowl, whisk together the eggs, granulated sugar, melted butter, sweetened condensed milk, evaporated milk, lime zest, lime juice, and vanilla extract until well combined.

4

Combine dry ingredients

PT2M

Add the anise seed (if using), salt, and baking powder to the grated cassava and stir to distribute evenly.

5

Make the batter

PT3M

Pour the wet ingredient mixture over the cassava mixture and stir until everything is evenly incorporated. The batter will be thick and slightly lumpy.

6

Bake

PT45M

Pour the batter into the prepared baking dish and smooth the top. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

7

Cool and serve

PT20M

Remove from the oven and let cool in the pan for at least 20 minutes before slicing. Dust with powdered sugar if desired. Serve warm or at room temperature.

Tips

  • Squeeze excess moisture from frozen cassava after thawing to avoid a soggy cake.
  • For a more pronounced citrus flavor, add an extra tablespoon of lime zest.

  • Let the cake cool completely before slicing for clean, neat pieces.

Serving suggestions

  • Serve with a cup of Cuban coffee or espresso.
  • Top with a dollop of whipped cream or a scoop of vanilla ice cream.
