Spamsilog is the ultimate Filipino breakfast—a trio of salty pan-fried Spam, fragrant garlic fried rice, and a sunny-side-up egg. It's hearty, satisfying, and comes together in under 20 minutes.

This version celebrates the Filipino love for Spam with a touch of whimsy: cook the Spam until caramelized and serve with a mountain of crispy garlic rice.

Fry the Spam

Place the Spam slices in a cold non-stick skillet (this helps release fat without splatter). Cook over medium heat, flipping once, until golden brown and caramelized on both sides, about 4-5 minutes total. Transfer to a plate and set aside.

Make garlic fried rice

In the same skillet, if not much oil remains from the Spam, add about 1 tablespoon oil. Add minced garlic and cook, stirring, until golden and fragrant, about 30 seconds. Add the cold rice, breaking up any clumps. Spread the rice in an even layer, then let it cook undisturbed for about 1 minute to get a slight crust, then toss. Add salt and white pepper. Continue stir-frying until the rice is heated through and has some crispy bits, about 3-4 minutes. Remove from heat and divide rice between two plates.

Fry eggs

Wipe out the skillet (optional; you can use a separate pan, but one pan is simpler). Add a little oil if needed. Crack the eggs into the skillet, making sure not to break yolks. Cook until the whites are set but the yolk is still runny (sunny-side-up), about 2-3 minutes. (For crispy edges, cook on high heat for 1 minute, then turn off heat.) Season with salt and pepper lightly.

Assemble and serve

Place the Spam slices on the plate alongside the garlic rice, with each portion getting 4 strips. Gently place a fried egg on top of the rice or beside. Garnish with chopped scallions if desired. Serve immediately with banana ketchup or your preferred condiment on the side.
