Method
Boil the beef
15 minutesIn a large pot, combine beef shank, onion, garlic, and peppercorns. Pour in water. Bring to a boil over high heat, then reduce heat to low and simmer, skimming off any foam that rises to the surface.
Simmer the broth
2 hoursCover and let simmer gently for about 2 hours, or until the beef is tender and the broth is rich. Add more water if needed.
Add corn and bananas
15 minutesOnce beef is tender, add corn and saba banana slices. Cook for another 15 minutes, until the bananas are soft but hold their shape.
Season and finish
5 minutesStir in fish sauce and salt. Adjust seasoning to taste. Add bok choy and cook for 2 minutes, just until wilted.
Serve hot
