Calamares with Atchara

About this dish
This classic Filipino dish features tender squid rings, battered and fried until golden and crunchy, served with a tangy-sweet atchara (pickled green papaya) that cuts through the richness. It's a staple in every Filipino gathering—my Lola always made it for fiestas, pairing it with her signature sawsawan (dipping sauce).
The contrast of hot, crispy calamares and cold, crunchy atchara is absolutely addicting.

Squid (calamares), cleaned

Green papaya, peeled and julienned
fruit1 medium (450 g)

Carrot, julienned

White vinegar (or cane vinegar)

White sugar

Salt for atchara brine
seasoning1 tbsp
Garlic cloves, minced
herb4 cloves
Fresh ginger, sliced thinly

Red chili, sliced (optional, for heat)

White vinegar or cane vinegar
liquid1/4 cup (60 ml)

Method
Prepare the Atchara (Pickled Papaya)
35 minsPlace the julienned green papaya in a large bowl and sprinkle with 1 tbsp salt. Toss well and let it rest for 30 minutes. After 30 minutes, squeeze out the excess liquid and rinse once under cold water to remove the salt. Set aside.
Make the Pickling Syrup
10 minsIn a small saucepan, combine vinegar, sugar, garlic, ginger, and optional chili. Bring to a simmer over medium heat, stirring until sugar dissolves completely. Turn off heat and let cool slightly.
Assemble Atchara
60 minsPlace the squeezed papaya and julienned carrot in a clean jar or bowl. Pour the warm vinegar mixture over them. Let it cool completely, then refrigerate. This is best prepared a day ahead for deeper flavor.
Prepare the Squid
15 minsClean the squid: pull the head and tentacles gently, remove the quill (transparent cartilage) from the body, and discard the internal organs. Rinse the tubes and tentacles thoroughly. Slice the squid tubes into 1/2-inch (1.25 cm) rings. Pat the rings and tentacles dry with paper towels.
Season and Coat the Squid
10 minsIn a bowl, season the squid rings with salt and black pepper. In another bowl, whisk the eggs. In a third bowl, combine flour and cornstarch. Dip each squid ring first into the egg mixture, then dredge in the flour-cornstarch mixture, shaking off any excess.
Heat the Oil
5 minsIn a deep pan or wok, heat oil over medium-high heat. To test, drop a bit of flour mixture into the oil; if it sizzles immediately, it's ready. The oil should be about 350°F (175°C).
Fry the Calamares
10 minsFry the squid rings in batches (do not overcrowd the pan) for about 2 minutes, until golden brown and crisp. Use a slotted spoon to transfer to a plate lined with paper towels. Continue with the remaining pieces.
Make the Dipping Sauce
3 minsIn a small bowl, combine vinegar, crushed garlic, black pepper, and salt. Stir well. This classic sawsawan is meant to be tangy and slightly peppery.
Serve
2 minsArrange crispy calamares on a serving platter. Serve with a side of atchara and the vinegar dipping sauce. Enjoy while hot!

- Pat squid completely dry before coating to ensure the batter sticks and fries up crisp.
- Let the squid marinate in the seasoning for at least 10 minutes before frying to enhance flavor., Atchara can be made up to a week in advance, the flavors only get better with time.
Serving suggestions
- Serve the crispy calamares immediately alongside the cold atchara and the vinegar dipping sauce. A cold bottle of San Miguel Pale Pilsen is the perfect partner, just like my Lola always insisted.
