Method

Prepare the bananas and jackfruit

Peel the saba bananas and slice each one in half lengthwise. If using jackfruit, cut into thin strips.

Wrap the rolls

Lay a lumpia wrapper on a clean surface. Place a banana half near one end, top with a slice of cheese and a strip of jackfruit. Sprinkle with a bit of brown sugar. Fold in the sides, then roll tightly. Seal the edge with water. Repeat for the remaining rolls.

Caramelize the rolls

Roll each wrapped turon in brown sugar until evenly coated. This creates a crispy caramel crust when fried.

Heat the oil

In a deep pan or pot, heat oil to 350°F (180°C). Use enough oil to submerge the rolls halfway.

Fry until golden

Gently slide 4-5 turon into the hot oil. Fry for 3-4 minutes, turning occasionally, until golden brown and crisp. Drain on paper towels.

  • Use saba bananas for the best texture, if unavailable, ripe plantains can work. They should be just ripe but still firm.
