Method
Sear the chicken
10 minutesHeat vegetable oil in a large pot over medium-high heat. Season chicken thighs with salt and pepper, then sear until golden on both sides, about 4–5 minutes per side. Remove and set aside.
Soften aromatics
3 minutesIn the same pot, reduce heat to medium. Add shallots, garlic, and ginger. Cook, stirring frequently, until softened and fragrant, about 2–3 minutes.
Bloom the curry paste
2 minutesAdd Thai red curry paste and cook for 1–2 minutes, stirring constantly, until deeply aromatic and slightly darkened.
Build the broth
25 minutesPour in coconut milk and chicken stock. Stir in Japanese curry roux cubes, fish sauce, and brown sugar. Bring to a gentle simmer, stirring until roux is completely dissolved. Add the seared chicken back into the pot. Simmer gently, covered, for 20–25 minutes until chicken is tender and cooked through.
Cook the noodles
5 minutesWhile the curry simmers, cook the Chinese egg noodles according to package directions in a separate pot of boiling salted water. Drain and set aside. (Reserve a portion of noodles to fry for topping, if desired.)
Serve
5 minutesDivide noodles among four bowls. Ladle the curry and chicken over the noodles. Top with crispy fried noodles, lime wedges, cilantro, sliced shallots, and pickled mustard greens if using. Serve hot.
