About this dish

This is my big, loud, loving hug of a stew. Ostri is Georgia's soul-warming beef stew, but I've traded in the usual potatoes for tender cactus pads (nopales).

The tangy-nutty cactus works like a dream with the wine-soaked beef and a blizzard of fresh herbs. Come here, let me feed you.

Ingredients

Method

Sear the Beef

Season the beef generously with salt and pepper. Heat 2 tbsp of olive oil in a large, heavy pot over medium-high heat. Working in batches, brown the beef on all sides. Transfer the beef to a plate and set aside.

Sauté the Aromatics

In the same pot, add the remaining 1 tbsp of olive oil. Add the onion and cook, stirring occasionally, until softened and translucent, about 5 minutes. Add the garlic and tomato paste and cook for 1 minute more.

Deglaze with Wine

Slowly pour in the red wine, using a wooden spoon to scrape up any fond stuck to the bottom of the pot. Let the wine bubble and reduce by about half, roughly 3 minutes.

Build the Stew Liquid

Pour in the beef broth. Add the bay leaves. Return browning from seasoning because we season each layer separately.

Tips

  • For a more floral and sour note, use walnuts in the marinade.
  • Ostri taste better day after because seasoning stars combine hugging ingredients.
  • Try to use a Fuyu persimmon at the actual instant it becomes ripe enough, no bitter textures inside.
  • If you aren't grinning by the end, add another spoonful of herbs.
  • When you prepare cactus leaves, use a knife and a paper. Hold pads with tongs or gloves should seriously protect hands.
