This version leans into late-summer peaches and a whisper of cinnamon, though the formula is forgiving: swap in apricots, figs, or cherries as the market dictates. The result is cooling, gently sweet, and substantial enough for breakfast or a golden-hour refresher.

Prepare the fruit

Halve the peaches, twist to separate, and remove the pits. Cut the flesh into rough chunks, leaving the skin on for colour and fibre. If your peaches are less than perfectly ripe, this is a good moment to taste one and adjust the honey later.

Load the blender

Add the Greek yogurt, peach chunks, cold milk, honey, cinnamon (if using), and vanilla (if using) to the blender jar. If you like a thicker, spoonable smoothie, start with only half the milk and add more as needed.

Blend until silky

Blend on high for 45 to 60 seconds, until the mixture is completely smooth and pale gold. Stop once to scrape down the sides if any fruit has stuck above the blades. Taste and add a little more honey if your peaches were shy.

Chill and adjust

Add the ice cubes and blend for another 10 seconds, just until frothy and cold. If you prefer a room-temperature smoothie, skip the ice and refrigerate the fruit beforehand instead.

Serve in golden light

Pour into two chilled glasses, drizzle a thin thread of honey over the surface, and dust with a little extra cinnamon if you like. Serve immediately, while the foam is still high and the colour is at its brightest.

Tips

  • Greek honey varies enormously by region: thyme honey from Crete is robust and herbal, pine honey from Evia is darker and malt-like, and wildflower honey is softer and more floral. Any of them work here, so use what you love.
  • For the thickest, most luxurious texture, use full-fat strained Greek yogurt and resist the urge to add extra milk. A smoothie made with sheep's-milk yogurt will taste noticeably richer than one made with cow's milk.
  • If you want to make this ahead, blend everything except the ice and keep it covered in the fridge for up to 12 hours. Give it a quick stir or a five-second blend before serving.
  • Frozen peaches work beautifully out of season, use the same weight and reduce the ice to two cubes, or omit it entirely.
