Dessert
Kataifi with Walnuts

About this dish
Kataifi with walnuts is the Greek dessert that turns a tangle of shredded phyllo into a golden, syrup-soaked masterpiece. This version stays true to the traditional recipe: crisp kataifi strands wrapped around a cinnamon-scented walnut filling, baked until deeply golden, then drenched in a honeyed syrup that seeps into every crevice.
You will find versions of this sweet across Greece and the Eastern Mediterranean, often served at festivals and family tables. The contrast of crunchy, buttery strands and tender, spiced nuts is what keeps everyone reaching for just one more piece.

Method
Prepare the syrup
10 minutesIn a medium saucepan, combine the sugar, water, honey, lemon juice, and cinnamon stick. Bring to a boil over medium-high heat, then lower the heat and simmer for 8–10 minutes until slightly thickened. Remove from heat, discard the cinnamon stick, and let the syrup cool completely while you make the kataifi.
Make the walnut filling
5 minutesIn a food processor, pulse the walnuts, sugar, ground cinnamon, and cloves (if using) until finely chopped but not pasty. Transfer to a bowl and set aside.
Prepare the kataifi
10 minutesIf frozen, thaw the kataifi overnight in the refrigerator. Unwrap it and gently pull the strands apart with your fingers to loosen them. Place in a large bowl and cover with a damp kitchen towel to prevent drying.
Assemble the rolls
20 minutesPreheat the oven to 180°C (350°F). Brush a 9x13-inch baking dish with melted butter. Take a handful of kataifi strands (about 1/2 cup) and spread them out on a clean surface. Sprinkle 2 tablespoons of the walnut filling along one short edge. Roll up tightly into a cylinder, then place seam-side down in the baking dish. Repeat with remaining kataifi and filling. Brush the tops generously with melted butter.
Bake
45 minutesBake in the preheated oven for 45 minutes, or until the kataifi is deep golden brown and crisp. If it browns too quickly, loosely cover with foil.
Syrup and rest
30 minutesRemove the baking dish from the oven and immediately pour the cooled syrup evenly over the hot kataifi. Let it sit for at least 30 minutes to absorb the syrup. For best results, allow it to rest for 1–2 hours at room temperature.

Tips
- Let the syrup cool completely before pouring it over the hot kataifi. Pouring hot syrup over hot pastry can make it soggy instead of crisp.
- Keep the kataifi covered with a damp towel while you work, it dries out quickly and becomes brittle.
- For a vegan version, substitute the butter with a good-quality vegan butter or olive oil, and use maple syrup instead of honey.
- Serve with a dollop of Greek yogurt or a scoop of vanilla ice cream to balance the sweetness.
Serving suggestions
- Serve at room temperature with strong Greek coffee or a glass of cold milk., Pair with fresh berries for a tart contrast.
- Sprinkle with extra chopped walnuts and a drizzle of honey before serving.
