Kataifi is one of Greece's most beloved syrupy sweets—a nest of shredded phyllo wrapped around a fragrant nut filling, bathed in a honey-lemon syrup. Here, pistachios take center stage, their emerald crunch a beautiful contrast to the crisp, golden strands.

Method
Prepare the syrup
10 minutesIn a small saucepan, combine the sugar and water. Bring to a simmer over medium heat, stirring until the sugar dissolves. Remove from heat, then stir in honey, lemon juice, and orange blossom water if using. Blend well and allow to cool to room temperature.
Mix the pistachio filling
5 minutesIn a medium bowl, mix the chopped pistachios, sugar, cinnamon, and orange zest. They are the song inside the crust—at once aromatic and sweet.
Preheat and prep the pan
2 minutesPreheat your oven to 180°C (350°F). Brush a 9x13-inch baking dish or a circular tray lightly with some of the melted butter.
Prepare the kataifi dough
5 minutesCarefully unroll the kataifi dough and cut it roughly in half, then tease the strands apart until they resemble a nest of golden threads. Toss gently with your hands to loosen and fluff them up.
Butter the strands
5 minutesPlace the loosened kataifi in a large bowl. Drizzle the remaining melted butter over it, tossing with your hands until every strand glistens with butter. Listen: each strand should whisper as it acquires the glow.
Assemble the kataifi rolls
15 minutesTo make spirals, remove a small bundle of buttered kataifi (about 2 tablespoons) and flatten it in the palm of your hand. Enclose a spoonful of the pistachio filling, then roll and arrange seam-side down in the prepared dish. Repeat, creating as many rolls or spiral nests as you like, pressing them snugly side by side.
Bake to golden
45 minutesBake in the center of the preheated oven for 40 to 50 minutes, until deeply golden and crisp—let the aroma of toasted butter and pistachio mingle until the kitchen is wrapped in flavor.
Pour over the syrup
2 minutesTake the baked kataifi out of the oven and, while it's still hot, pour the cool syrup evenly over it. The hiss and sizzle is a familiar Greek melody; the pastry drinks up every drop.
Cool and rest
240 minutesAllow the pastry to rest and fully absorb the syrup for at least 3–4 hours (or overnight) before serving, so it becomes that beautifully sticky, tender treasure.
Serve and dust
5 minutesBefore serving, roughly chop a small handful of extra pistachios and sprinkle over the top for a little emerald applause. They add crunch and a brilliant flourish.
