A comforting, warmly spiced chicken curry where plump spelt berries add a delightful chewiness. This is a Northern Indian-style curry with a tomato-onion gravy, enriched with yogurt and cream, and perfumed with cardamom, cinnamon, and cloves.

Method

Soak Spelt Berries

Soak the spelt berries in water for at least 30 minutes or up to overnight. Drain and set aside.

Sauté Aromatics

Heat oil in a heavy Dutch oven or pot over medium heat. Add cardamom, cinnamon, bay leaves, and allow them to sizzle for a few seconds. Add onion and cook until golden brown, about 8 minutes. Add ginger and garlic, sauté until fragrant, about 1 minute.

Stir in turmeric, cumin, coriander, garam masala, and chili powder. Cook 1 minute, letting the spices release their aroma.

Add Chicken

Add chicken pieces in batches; sear until lightly browned, about 5 minutes per batch. Remove and set aside.

Make Sauce

Stir in crushed tomatoes and broth. Bring to simmer. Return chicken to pot and add the drained spelt berries. Season with salt. Bring to a boil, then reduce heat to low. Cover and simmer gently for 1 hour, until chicken is tender and spelt is chewy-soft, stirring occasionally.
