Method

Soak the Kelp

15 minutes

Rinse the dried kelp strip under running water to remove any debris. Place it in a bowl and cover with water. Soak for 10 minutes until softened. Drain and slice into thin strips or small pieces. Set aside.

Rinse the Lentils

5 minutes

Rinse the red lentils in a fine-mesh strainer under cold water until the water runs clear. This removes excess starch and helps them cook evenly.

Sauté the Aromatics

In a large saucepan, heat 1 tablespoon of coconut oil over medium heat. Add the chopped onion and cook for 5-7 minutes until soft and translucent. Add the garlic and ginger, and cook for another minute until fragrant.

Add the Spices

Stir in the turmeric, ground cumin, ground coriander, and optional cayenne pepper. Cook for 1 minute, stirring constantly, to toast the spices and release their oils.

Add Tomatoes and Kelp

Add the tomato puree and the sliced kelp. Cook for 3-4 minutes, allowing the tomatoes to deepen in color.

Simmer the Lentils

25 minutes

Add the rinsed lentils, coconut milk, water, and salt. Stir everything together. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, stirring occasionally, until the lentils are tender and the curry has thickened.

Prepare the Tempering

While the dhal cooks, heat 1 tablespoon of coconut oil in a small skillet over medium-high heat. Add the black mustard seeds and cook until they start to pop, about 30 seconds. If using, add the dried red chili and curry leaves. Sizzle for 10-15 seconds, then remove from heat.

Finish and Serve

Once the lentils are cooked, pour the tempering over the dhal and stir gently to incorporate. Taste and adjust salt, if needed. Serve hot, garnished with fresh cilantro. Enjoy with rice or your favorite flatbread.
