Prep the carrots

Wash, peel, and grate the carrots using the large holes of a box grater. You should have about 6 cups of grated carrots.

Heat the ghee and add carrots

In a heavy-bottomed pan or kadai, heat the ghee over medium heat. Add the grated carrots and sauté for 5-7 minutes, stirring occasionally, until they turn slightly soft and release their aroma.

Add milk and simmer

Pour in the milk and stir well. Bring to a boil, then reduce the heat to medium-low. Let it simmer gently, stirring every few minutes, until the carrots are fully cooked and the milk has mostly evaporated. This takes about 30-35 minutes.

Add sugar and cardamom

Stir in the sugar and crushed cardamom seeds. Continue to cook on low heat, stirring frequently, until the mixture thickens and starts to leave the sides of the pan, about 15-20 minutes.

Toast the nuts

In a small pan, dry-roast the cashews, almonds, and raisins over low heat until the nuts are golden and the raisins plump up. Set aside a few for garnish.

Finish and serve

Stir in the toasted nuts, reserving a few for garnish. Cook for another 2-3 minutes until everything is well combined and the halwa has a fudgy texture. Serve warm in bowls, garnished with the reserved nuts.
