This crunchy walnut toffee gets a warm, aromatic lift from freshly ground cardamom, making it a delightful treat to share during festivals or as an after-dinner sweet. The earthy bitterness of dark chocolate balances the sweet, buttery toffee, while the nuts add a satisfying crunch.
It's incredibly easy to make and keeps well for gifting.

Chopped walnuts

Method
Prep the pan and cardamom
5 minLine an 8-inch (20 cm) square baking dish with parchment paper. Crush 6 green cardamom pods, remove the seeds, and grind to a fine powder. Set aside.
Toast the walnuts
4 minIn a dry skillet over medium heat, toast the walnuts for 3–4 minutes until fragrant. Set aside to cool.
Make the toffee base
8 minIn a heavy saucepan, combine sugar, butter, and a pinch of salt. Cook over medium heat, stirring constantly, until the butter melts and the sugar dissolves. Continue cooking, stirring occasionally, until the mixture turns a deep amber color (about 5–7 minutes).
Add walnuts and cardamom
1 minRemove the pan from the heat and quickly stir in the toasted walnuts and ground cardamom. Work fast, as the toffee will start to harden.
Spread the toffee
2 minPour the hot toffee into the prepared baking dish and spread it into an even layer using a spatula or the back of a spoon.
Let it cool
30 minAllow the toffee to cool completely at room temperature until firm, about 30 minutes. If you're in a hurry, refrigerate for 15 minutes.
Break into pieces
5 minOnce firm, lift out the toffee slab and break into irregular pieces with your hands or a knife.
Melt the chocolate
5 minIf using chocolate, melt it in a double boiler or in the microwave in 30-second bursts, stirring until smooth.
Dip the toffee
10 minDip each piece into the melted chocolate, allowing the excess to drip off. Place on a parchment-lined tray and sprinkle with extra chopped walnuts, if desired.
Set the chocolate
15 minLet the chocolate set completely at room temperature or in the refrigerator for about 15 minutes.

Tips
- Use a candy thermometer if you like: the toffee is ready when it reaches the 'hard-crack' stage (300°F / 150°C) for a brittle texture.
- Be careful when working with hot sugar – it's extremely hot and can cause burns. Keep children away from the stove.
- Cardamom loses its punch quickly once ground. Always grind fresh from the pods for the most aromatic toffee.
- Store the toffee in an airtight container at room temperature for up to 2 weeks, or freeze for up to 3 months.
