Method
Sauté Whole Spices
1 minuteHeat oil in a heavy-bottomed pot over medium heat. Add bay leaf, cardamom pods, cloves, and cinnamon stick. Sauté until aromatic, about 30 seconds.
Brown the Onions
10 minutesAdd finely chopped onions and a pinch of salt. Cook, stirring often, until onions are golden brown, about 8-10 minutes.
Add Ginger-Garlic and Spices
2 minutesAdd ginger-garlic paste and sauté for 1 minute until raw smell disappears. Add turmeric, red chili powder, and ground coriander. Stir well for 30 seconds.
Cook Tomatoes
6 minutesAdd tomato puree and cook until the sauce thickens and oil separats, about 5-6 minutes.
Marinate Chicken
10 minutesIn a bowl, mix chicken pieces with yogurt, 1 tablespoon of ginger-garlic paste, and 1/2 teaspoon turmeric. Set aside for 10 minutes.
Add Chicken and Sauté
6 minutesAdd the marinated chicken to the pot and cook over medium-high heat, stirring frequently, until chicken turns white on all sides, about 5-6 minutes. This helps seal in juices.
Add Bamboo Shoots
2 minutesAdd sliced bamboo shoots and green chilies. Stir to combine all ingredients with the chicken.
Simmer Curry
30 minutesPour in 1 cup warm water. Add salt to taste. Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes or until chicken is tender and cooked through. Stir occasionally.
Finish with Garam Masala
3 minutesOnce chicken is cooked, sprinkle garam masala and stir gently. Simmer uncovered for 2-3 minutes until the gravy reaches your desired consistency.
Garnish and Serve
1 minuteGarnish with freshly chopped cilantro. Serve hot with steamed rice or Indian flatbread.

Tips
- For a true Northeastern Indian flavor, use mustard oil and let it heat well before adding spices. It adds a pungent, robust kick that complements the bamboo shoots.
- If using vacuum-packed bamboo shoots, rinse them thoroughly after slicing to reduce any strong preserved taste, drain well before adding.
- Adjust the number of green chilies and red chili powder to suit your heat preference. The curry should be mildly spicy with an underlying warmth.
- For a quicker weeknight version, you can cook the chicken and bamboo shoots in a pressure cooker for 5-6 whistles instead of slow simmering on the stovetop.
Serving suggestions
- Serve this curry with steamed basmati rice or jeera rice for an everyday meal. It also pairs deliciously with soft flatbreads like roti, naan, or appam. A side of cucumber salad or raita (yogurt with mint) would cool the palate beautifully.
