This isn't your average dhal: by adding celery, this Indian-inspired lentil curry takes on a fresh, aromatic crunch that plays surprisingly well with the warm spices. It's pantry-friendly, budget-conscious, and comes together in under an hour—perfect for a weeknight bowl of comfort.

Red lentils
grain1 cup (200g)

Water

Celery
vegetable2 stalks, finely chopped
Onion
vegetable1 medium, finely chopped
Garlic
herb3 cloves, minced
Ginger
herb1 tablespoon, grated
Tomato
vegetable1 large, chopped
Vegetable oil
fat2 tablespoons
Mustard seeds
spice1 teaspoon
Cumin seeds
spice1 teaspoon
Turmeric powder
spice1/2 teaspoon
Coriander powder
spice1 teaspoon
Garam masala
spice1/2 teaspoon
Salt

herb1/4 cup, chopped
Method
Rinse and soak lentils
PT10MRinse the red lentils in cold water until the water runs clear. Soak in water for 10 minutes while you prep the vegetables.
Boil lentils
PT20MDrain and transfer lentils to a pot with 3 cups of fresh water. Bring to a boil, then reduce heat and simmer, partially covered, until lentils are soft and mushy, about 20 minutes. Set aside.
Sauté aromatics
PT5MIn a large skillet or Dutch oven, heat oil over medium heat. Add mustard seeds and cumin seeds; when they sizzle, add onion. Sauté until translucent, about 5 minutes.
Add ginger, garlic, and celery
PT4MStir in garlic, ginger, and celery. Cook for 3-4 minutes until fragrant and celery begins to soften.
Add spices and tomato
PT5MAdd turmeric, coriander, and garam masala. Stir for 30 seconds, then add chopped tomato. Cook until tomatoes break down, about 5 minutes.
Combine with lentils
PT15MAdd the cooked lentils along with any remaining liquid to the skillet. Stir well and bring to a simmer. Cook for 10-15 minutes until the curry thickens to your liking. Season with salt.
Finish and serve
PT1MGarnish with fresh cilantro, if using. Serve hot with rice or flatbread.
