Mix the kebab mixture

In a large bowl, combine the ground chicken, chopped onion, ginger-garlic paste, green chilies, cilantro, mint, garam masala, ground coriander, cumin, paprika, turmeric, salt, and lemon juice. Mix everything together with your hands until the spices are evenly distributed and the mixture becomes slightly sticky. This helps the kebabs hold together.

Chill the mixture

Cover the bowl and refrigerate for at least 15 minutes. Chilling makes the mixture easier to handle and allows the flavors to meld.

Preheat the grill

If using wooden skewers, soak them in water for 30 minutes. Preheat your grill to medium-high heat (about 200°C / 400°F). If using an oven broiler, set it to high and line a baking sheet with foil.

Shape the kebabs

Divide the chicken mixture into 8 equal portions. Take one portion and press it around a skewer, forming a long, smooth sausage shape about 6 inches long and 1 inch thick. Moisten your hands with a little oil to prevent sticking. Repeat with the remaining portions.

Grill the kebabs

Brush the kebabs lightly with oil. Place them on the grill (or under the broiler) and cook for about 12–15 minutes, turning occasionally, until the chicken is cooked through and the surface is nicely charred in spots. The internal temperature should reach 165°F (74°C).

Rest and serve

Remove the kebabs from the grill and let them rest for 5 minutes. This allows the juices to redistribute. Serve hot with mint chutney and lemon wedges.
