Cook the lentils

Rinse the red lentils under cold water until the water runs clear. In a heavy-bottomed pot, combine the lentils, water, turmeric, and salt. Bring to a boil, then reduce the heat to low and simmer, partially covered, for about 20 minutes, until the lentils are soft and have broken down slightly. Stir occasionally and add a little hot water if needed to keep the dhal creamy. Once cooked, use a whisk or the back of a spoon to mash some of the lentils for a thicker texture. Set aside.

Prepare the plantain

While the lentils cook, peel the plantain and slice it into 1/2-inch rounds. If the plantain is very ripe, the skin may be brownish and the fruit sweet; that's perfect. Set aside.

Fry the plantain

In a separate skillet, heat 1 tablespoon of oil or ghee over medium heat. Add the plantain slices in a single layer (work in batches if needed) and fry for 2-3 minutes per side, until golden and caramelized. Remove from the skillet and set aside.

Temper the spices

In the same skillet (or in a small tempering pan), heat the remaining 1 tablespoon of oil or ghee. Add the mustard seeds and cumin seeds; they will sizzle and pop. Once they stop popping, add the curry leaves and stir for a few seconds.

Sauté aromatics

Add the chopped onion, garlic, ginger, and green chilies (if using). Sauté over medium heat for 4-5 minutes until the onion is soft and translucent.

Add tomatoes and spices

Stir in the chopped tomato, red chili powder, coriander powder, and garam masala. Cook for 2-3 minutes, until the tomatoes have softened and the oil begins to separate from the masala.

Combine the dhal and plantain

Pour the cooked lentils into the skillet with the masala. Stir well to combine. If the dhal is too thick, add a little hot water to reach your desired consistency. Add the fried plantain slices, stirring gently so they don't break apart. Simmer for 5 minutes to allow the flavors to meld. Taste and adjust salt.

Finish and serve

Garnish with fresh cilantro and serve hot with steamed rice or flatbreads. A squeeze of lime adds a bright, sour note that balances the sweetness of the plantain.
