Method

Prepare the fish

Rinse the fish fillets and pat them dry with paper towels. Cut into large chunks if the fillets are big. Season lightly with a pinch of salt and set aside.

Temper the spices

Heat oil in a large skillet or pan over medium heat. Add the mustard seeds and let them splutter for a few seconds. Then add the curry leaves and green chillies, and sauté for 30 seconds until fragrant.

Cook the aromatics

Add the finely chopped onions and cook, stirring occasionally, until they turn translucent and lightly golden, about 5 minutes. Add the ginger-garlic paste and cook for another minute until the raw smell disappears.

Make the tomato masala

Stir in the chopped tomatoes, turmeric, coriander powder, cumin, and red chilli powder (if using). Cook the masala for about 5 minutes, until the tomatoes soften and turn mushy, and the oil starts to separate from the sides.

Add the liquids

Pour in the coconut milk and water, and bring the sauce to a gentle simmer. Let it cook, uncovered, for 2-3 minutes to slightly thicken. Season with salt to taste.

Cook the fish

10 mins

Gently slide the fish pieces into the simmering gravy. Spoon some sauce over the tops. Cover the pan and let the curry cook on low heat for about 7-10 minutes, until the fish is opaque and flakes tenderly; be careful not to stir too much to avoid breaking the fish.

Finish and serve

Once the fish is cooked, turn off the heat. Garnish with chopped cilantro. Serve hot with steamed rice or rotis.

Tips

  • Use a firm white fish like cod, tilapia, or basa so the fillets don't fall apart during cooking.
