About this dish
Al-bap is Korea’s answer to a quick, crave-worthy rice bowl, where gleaming orange fish roe spooned over hot rice becomes a celebration of texture and sea-salt umami. In this home version, I use soy sauce-marinated pollock roe (myeongnan-jeot), but a generous scoop of fresh tobiko or salmon roe works beautifully without the marinating step.
The key is letting the rice sizzle in a hot stone bowl before you crack a sea urchin or two on top – plus avocados and cucumber, of course – for that creamy, crunchy, utterly addictive combo.

Method
Cook the rice
20 minutes (for rice cooking)Rinse the rice until the water runs clear, then combine with 1 cup water in a rice cooker or saucepan. Cook according to your preferred method, then let it sit covered loosely to keep warm.
Make the sauce
5 minutesIn a small bowl, stir together the gochugaru, minced garlic, and toasted sesame seeds. Add the soy sauce or tamari and sesame oil. This will be the flavor base you toss into the roe
Combine the roe
2 minutesIf using seasoned pollock roe, gently fold it into the sauce with a spoon. For fresh tobiko or salmon roe, omit the sauce–place it in a separate small bowl mixed with a tiny pinch of sesame oil and a drop of soy sauce, if you like, to season lightly.
Prepare garnishes
3 minutesAdd the rice to each serving bowl. Smooth the rice into an even layer, then drizzle any remaining marinade from the roe bowl over the rice edges so it crisps up into a savory crust.
Heat the bowls (optional)
3 minutesIf you have a dolsot-style stone bowl, add a few drops of oil and set it on medium-high heat for 2 to 3 minutes until the rice starts to sizzle and crackle underneath. Wait, low heat is safer—or preheat the bowls and add rice. Let the bottom form a golden crust for 1–2 minutes before topping
Assemble the bowl
3 minutesSpoon the seasoned roe generously over the rice. It’s delicious when you see the little pearls nestle into the hot grains. Add cucumber slices and avocado fan. For extra richness, you can top with a sunny-side-up egg—though it's entirely optional.
Finish and serve
1 minuteScatter crumbled gim over the top. Rice goes in last? No—handle the top first. Serve immediately while the bowl is sizzling warm, mixing everything together so the heat gently warms the roe and the sesame oil becomes creamy. Enjoy with a chilled lager soju pair.
