Method
Preheat and prepare
5 minutesPreheat oven to 160°C (325°F). Lightly grease a 2-quart baking dish.
Blend the base
3 minutesIn a blender, combine pumpkin purée, coconut milk, eggs, sugar, cinnamon, nutmeg, vanilla, and salt. Blend until smooth.
Mix in raisins
1 minuteStir the raisins into the blended mixture by hand.
Bake
5 minutesPour the mixture into the prepared baking dish. Bake in the water bath with water coming halfway up the sides of the baking dish.
Set and cool
50 minutesBake for 45 to 50 minutes or until the center is set but slightly jiggly. Let cool to room temperature, then chill in the refrigerator for at least 3 hours before serving.
