About this dish

Dolsot bibimbap is the showstopper of Korean home cooking: seasoned vegetables, tender beef, and a glistening egg arranged over rice in a heated stone bowl, where the rice crackles and forms a golden, crispy crust. The name combines 'dolsot' (stone pot) and 'bibimbap' (mixed rice), a dish with roots in Korean royal court cuisine and later adapted for everyday kitchens.

The key is thermal drama—the bowl stays hot enough to toast the rice underneath while everything mingles into a savory, sesame-scented feast. Serve it sizzling, then scrape up the crispy bits before they disappear.

Method

1

Cook the rice

20 minutes

Rinse the short-grain rice under cold water until the water runs clear. Cook according to the package instructions using slightly less water than usual (about 360 ml or 1½ cups water) to get very slightly firm rice perfect for crisping.

2

Marinate the beef

10 minutes

In a small bowl, combine the sliced beef, soy sauce, 1 teaspoon of the sesame oil, half of the minced garlic, and sugar. Mix well and set aside while you prep the vegetables.

3

Season the spinach

5 minutes

Blanch the spinach in boiling water for 30 seconds, then drain and squeeze out excess water. Toss with a pinch of salt, a drizzle of sesame oil, and a little minced garlic. Set aside.

4

Blanch the bean sprouts

5 minutes

Blanch bean sprouts in boiling water for 1–2 minutes until just tender but still crisp. Drain, rinse under cold water, and toss with a pinch of salt, minced garlic, and a splash of sesame oil.

5

Stir-fry the carrots and mushrooms

6 minutes

Heat half of the cooking oil in a skillet over medium-high heat. Sauté carrots and shiitake mushrooms separately for about 2 minutes each, adding a pinch of salt, until tender. Transfer to a plate.

6

Cook the beef

4 minutes

Add the marinated beef to the same hot skillet and stir-fry until cooked through and slightly caramelized, about 3–4 minutes. Set aside.

7

Fry the eggs

4 minutes

Wipe the skillet and heat a little oil. Fry the eggs sunny-side up until the whites are just set and the yolks still jiggle. Season lightly with salt.

8

Heat the stone pot

4 minutes

Place a clean, dry dolsot (stone pot) on the stove over medium heat. Add 1 tablespoon of sesame oil and swirl to coat the bottom and lower sides. Heat until the oil shimmers and the pot is very hot, about 3–4 minutes.

9

Crisp the rice

4 minutes

Carefully add the cooked rice to the hot pot, pressing it gently into an even layer to create contact with the hot surface. Let it sizzle undisturbed for 2–3 minutes to form a crispy bottom crust.

10

Arrange the toppings

1 minute

Working quickly, arrange the spinach, bean sprouts, carrots, mushrooms, and beef in colorful clusters over the sizzling rice. Place the fried eggs in the center.

11

Finish and serve

1 minute

Sprinkle sesame seeds and sliced green onions over the top. Serve immediately with gochujang on the side to mix in at the table, piping hot.

Tips

  • Make sure the stone pot is completely dry before adding oil and heating—any moisture can cause the oil to splatter violently.
  • For an extra-crispy bottom crust, use day-old cooked rice and press it firmly into the hot pot, then let it sizzle without stirring for at least 2–3 minutes.
  • Cook each vegetable separately if you can—it keeps flavors clean and textures distinct, which makes the final bowl taste fresh and vibrant rather than muddy.
  • Serve additional gochujang on the side so everyone can control the heat, and encourage mixing thoroughly at the table for the full bibimbap experience.

Serving suggestions

  • Serve with a bowl of light doenjang soup on the side., Pair with kimchi for a classic Korean meal.
  • Offer extra sesame oil and gochujang at the table for personalizing.
