Manakish Zaatar (Flatbread with Thyme & Sesame Mixture)

About this dish
Manakish zaatar is a beloved Lebanese flatbread, often enjoyed for breakfast or as a snack. Topped with a fragrant blend of za'atar (wild thyme), sesame seeds, and sumac, then baked until golden and crispy, it carries the earthy, tangy flavors of the Levant.
As a tahini-loving Lebanese cook, I love brushing the dough with a bit of olive oil mixed with tahini for extra creaminess—it's my little twist that makes the crust sing.
Ingredients

All-purpose flour

Method
Activate Yeast
10 minutesIn a small bowl, combine warm water, sugar, and instant yeast. Let sit for 5-10 minutes until foamy.
Mix Dough
5 minutesIn a large mixing bowl, whisk together flour and salt. Add the yeast mixture and 2 tablespoons of olive oil. Mix until a shaggy dough forms.
Knead Dough
10 minutesTurn the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic. The dough should be soft but not sticky.
First Rise
60 minutesPlace the dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour until doubled in size.
Make Za'atar Topping
5 minutesIn a small bowl, combine za'atar, sesame seeds, remaining olive oil, and tahini. Stir until it forms a spreadable paste.
Preheat Oven
30 minutesPreheat your oven to 475°F (245°C). If using a baking stone, place it in the oven to heat.
Shape Manakish
10 minutesPunch down the dough and divide into 4 equal pieces. On a lightly floured surface, roll each piece into a 1/4-inch thick round, about 8 inches in diameter.
Top and Bake
10 minutesSpread a generous layer of the za'atar mixture over each round, leaving a small border. Place on a baking sheet or directly on a hot stone. Bake for 8-10 minutes until the bottom is golden and the topping is fragrant.
Cool and Serve
5 minutesRemove from the oven and brush lightly with olive oil if desired. Serve warm with fresh vegetables, olives, or labneh.

Tips
- For a creamier texture, I like to add a little tahini to the za'atar paste—it deepens the richness without overpowering the thyme.

- If you don't have a baking stone, a preheated upside-down baking sheet works well to mimic a hot surface.
- Manakish freezes beautifully—bake them, let cool, then wrap tightly and reheat in a hot oven for 5 minutes.
Serving suggestions
- Serve with sliced tomatoes, cucumbers, olives, fresh mint, and a side of labneh or yogurt. Also delicious with a drizzle of olive oil and a sprinkle of sumac.
