About this dish

Mujadara is the humble Lebanese cornerstone of lentils, rice, and deeply caramelized onions, and this version adds toasted vermicelli for a nutty depth that makes it irresistible. Simmered until the lentils are tender and the rice steams separate and fluffy, it's finished with a crown of crispy onions and served with tangy yogurt or a generous dollop of tahini sauce.

A naturally vegan and protein-rich dish that has fed families across the Levant for centuries, it's proof that the simplest pantry staples can deliver the most satisfying meal.

Method

1

Rinse and sort the lentils

5 minutes

Pick through the lentils for any small stones and rinse under cold water until the water runs clear.

2

Simmer the lentils

20 minutes

In a large pot, combine the lentils with 4 cups (960 ml) water and 1/2 teaspoon salt. Bring to a boil, then reduce heat and simmer, partially covered, until the lentils are tender but still hold their shape, about 20 minutes. Drain, reserving the cooking liquid.

3

Caramelize the onions

25 minutes

While the lentils cook, heat the olive oil in a large skillet over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until deeply golden and caramelized, 20-25 minutes. Set aside.

4

Toast the vermicelli

4 minutes

In a separate dry skillet over medium heat, toast the broken vermicelli until golden brown and fragrant, about 3-4 minutes. Stir constantly to avoid burning.

5

Cook the rice and vermicelli

20 minutes

Rinse the basmati rice until the water runs clear. In the same pot used for the lentils, add the rice, toasted vermicelli, cumin, black pepper, and 2 cups (480 ml) of the reserved lentil cooking liquid (or water). Bring to a boil, then reduce heat to low, cover, and simmer until the rice is tender and liquid absorbed, about 15 minutes. Remove from heat and let sit, covered, for 5 minutes.

6

Combine and serve

5 minutes

Fluff the rice with a fork. Gently fold in the cooked lentils and half of the caramelized onions. Transfer to a serving platter and top with the remaining onions and chopped parsley. Serve warm.

Tips

  • For the crispiest onions, fry them in a separate skillet with a little extra oil until dark and crunchy, then scatter over the dish just before serving.
  • If you prefer a creamier texture, mash a portion of the cooked lentils with a fork before folding them into the rice., Day-old mujadara tastes even better, reheat gently with a splash of water to prevent drying.

Serving suggestions

  • Serve with a dollop of plain yogurt or a drizzle of tahini sauce for a creamy contrast.
  • Pair with a simple tomato and cucumber salad dressed with lemon and olive oil.
  • Accompany with warm pita bread and pickled turnips.
