About this dish

Riz bil lahme is a staple Lebanese home dish where rice and tender meat are cooked together until the grains drink up a warmly spiced broth. Some families layer it with toasted nuts and a drizzle of tahini-lemon sauce, while others keep it simple and serve it with yogurt.

This version leans into the creamier side, adding a tahini-yogurt sauce that hugs every grain and a handful of chickpeas for substance. It is the kind of one-pot meal that feels both comforting and quietly celebratory.

Method

1

Brown the lamb

PT15M

Pat the lamb cubes dry and season with 1 teaspoon salt and 1/2 teaspoon black pepper. Heat 2 tablespoons olive oil in a heavy pot over medium-high heat. Sear the lamb in batches until deeply browned on all sides, about 6–8 minutes per batch. Transfer to a plate.

2

Soften the aromatics

PT6M

Lower the heat to medium. Add the remaining 1 tablespoon olive oil, then the chopped onion. Cook, scraping up browned bits, until soft and translucent, about 5 minutes. Stir in the garlic and cook for 30 seconds until fragrant.

3

Bloom the spices

PT2M

Add the baharat, cinnamon, and allspice to the pot. Stir constantly for 30–45 seconds until the spices smell toasted and coat the onions. Return the lamb and any juices to the pot and toss to coat.

4

Simmer the lamb

PT45M

Pour in the broth and add the remaining 1 teaspoon salt. Bring to a boil, then reduce heat to low, cover, and simmer until the lamb is tender, about 45 minutes. Stir in the chickpeas during the last 5 minutes.

5

Toast the nuts

PT3M

While the lamb simmers, toast the almonds and pine nuts in a dry skillet over medium heat until golden and fragrant, 2–3 minutes. Set aside.

6

Cook the rice

PT30M

Stir the rinsed rice into the pot with the lamb and chickpeas. Cover and cook on low until the rice is tender and has absorbed most of the liquid, 18–20 minutes. Do not stir during cooking. Remove from heat and let rest, covered, for 10 minutes. Fluff with a fork.

7

Make the tahini-yogurt sauce

PT5M

In a bowl, whisk the tahini with lemon juice until it thickens, then whisk in the yogurt and 2–3 tablespoons cold water until smooth and pourable. Season with a pinch of salt.

8

Serve

PT3M

Spoon the rice and lamb onto a platter or into bowls. Drizzle generously with the tahini-yogurt sauce and scatter the toasted nuts and parsley over the top. Serve warm.

Tips

  • Rinse the rice until the water runs clear to remove excess starch, which keeps the grains separate rather than gluey.
  • Let the cooked rice rest off the heat for 10 minutes before fluffing, this finishes the steaming and prevents mushy grains.
  • If you prefer a more pronounced tahini flavour, add a spoonful of the sauce directly into the pot in the last few minutes of cooking.
  • The dish thickens as it sits, so loosen leftovers with a splash of broth or water when reheating.

Serving suggestions

  • Serve with a simple cucumber and tomato salad, Accompany with warm pita bread.
  • Offer extra tahini-yogurt sauce and lemon wedges on the side, Pair with a glass of ayran or iced mint tea.
