About this dish

Khao tang na kung is a classic Thai snack of toasty rice crackers topped with a glossy, spicy shrimp relish. The contrast of crunch and tender shrimp is pure magic; if the relish isn't loud, it's not Thai enough.

Method

1

Prepare the shrimp

5 minutes

Roughly chop the shrimp into small pieces. If using a mortar and pestle, pound them into a coarse paste; otherwise, chop finely with a knife until sticky.

2

Make the relish

3 minutes

Heat a splash of oil in a wok over medium heat. Add the red curry paste and fry until fragrant, about 1 minute. Add the shrimp paste and cook, breaking it up, until it turns pink.

3

Season the relish

4 minutes

Stir in coconut milk, fish sauce, and palm sugar. Simmer until the mixture thickens and coats the shrimp, 3–4 minutes. Taste and adjust balance. Remove from heat and fold in kaffir lime leaves.

4

Fry the rice crackers

3 minutes

Heat 500 ml (2 cups) vegetable oil in a wok or deep pan to 180°C (350°F). Fry rice crackers in batches for 10–15 seconds per side, until puffed and golden. Drain on paper towels.

5

Assemble and serve

2 minutes

Place rice crackers on a platter. Spoon a generous amount of shrimp relish onto each. Garnish with cilantro and extra shredded lime leaves. Serve immediately; watch them disappear.

Tips

  • Don't overcook the shrimp or it will turn rubbery.
  • Fry the rice crackers in small batches so they puff evenly.
  • Adjust the spice level by using more or less red curry paste.
  • For extra crunch, toast the rice crackers in a dry pan instead of frying for a lighter version.

Serving suggestions

  • Serve as an appetizer with cold Thai beer or iced tea.
  • Pair with fresh cucumber slices to cool the spice.
