Method

1

Soak the rice

PT5M

Rinse the glutinous rice until water runs clear, then soak in plenty of water for at least 4 hours or overnight. Drain well.

2

Prepare coconut mixture

PT5M

In a small saucepan, warm coconut milk, sugar, and salt over low heat until sugar dissolves. Do not boil. Set aside.

3

Mix rice and beans

PT5M

In a large bowl, combine drained rice, cooked black beans, and half of the coconut mixture. Stir to coat evenly.

4

Prepare banana leaves

PT10M

Wipe banana leaves clean with a damp cloth. Cut into 20x30 cm (8x12 inch) rectangles. Soften over an open flame or in boiling water for a few seconds to make pliable.

5

Wrap the parcels

PT15M

Place 1/4 cup rice mixture in center of a banana leaf rectangle. Fold sides over to form a tight parcel. Secure with toothpicks or twine. Repeat with remaining ingredients.

6

Steam

PT40M

Arrange parcels in a steamer basket and steam over high heat for 30-40 minutes, until rice is cooked through and translucent.

7

Tips

  • Soaking the rice overnight gives the best texture, if short on time, use hot water and soak for at least 2 hours.
  • If banana leaves are not available, you can use aluminum foil, but the aroma will differ.
  • To prevent parcels from sticking, lightly oil the banana leaves before wrapping.
  • Steaming time may vary depending on parcel size, check one after 30 minutes.

Serving suggestions

  • Enjoy as a snack or dessert with Thai tea or coffee.
