Pani Puri with Teff Filling

A Nepali twist on the classic Indian chaat, this pani puri replaces the typical potato filling with a protein-rich teff and vegetable mixture, served with a zesty, herbaceous pani. It's a fun, interactive appetizer that brings a burst of flavor to any gathering.

Method
Cook the teff
20 minutesRinse teff under cold water. In a small saucepan, combine teff and 1 cup water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until all water is absorbed. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and set aside.
Make the filling
10 minutesIn a mixing bowl, combine the cooked teff, potato, onion, peas, carrot, 1 tablespoon lemon juice, cumin, coriander, chaat masala, and salt to taste (if desired). Mix well. Adjust seasoning if needed. Set aside.
Blend the pani
10 minutesIn a blender, combine mint leaves, cilantro, ginger, green chili, and 1 cup of the cold water. Blend until smooth. Transfer to a pitcher or bowl, then add remaining 2 cups cold water, lemon juice, black pepper, and salt to taste. Stir well. Chill until ready to serve.This can be made ahead.
Assemble the puri
5 minutesJust before serving, make a small crack on top of each puri shell. Fill each shell with about 1 teaspoon of the teff filling. You can also serve the filling and puris separately for guests to assemble themselves.
Serve
2 minutesTo eat, pour a spoonful of the chilled pani into each filled puri, then pop it in your mouth in one go. Serve immediately with extra pani and tamarind chutney on the side.

Tips
- You can make the teff filling and pani a day in advance, store them separately in the refrigerator and assemble right before serving to keep the puris crisp.
- If you can't find tamarind chutney, you can substitute with a mix of date syrup and a little lemon juice.
- To tone down the heat for kids, omit the green chili or use only a half chili, and serve with a milder filling., Puri shells are delicate, keep them in the air-tight package they come in and fill them only just before eating so they stay crisp.

- Serve as a party appetizer or a fun interactive starter. Pair with a cooling mango lassi (dairy-free if needed) or masala chai.
