Plain Greek yogurt

Imperial measurement: 2 cups
Cold water
liquid750 ml

Seltzer water

Sweet apple

Method
Core and slice the apple
5 minWash the apple, core it, and cut into thin slices. Reserve a few slices for garnish. Finely chop the rest.
Blend yogurt with water and apple
2 minIn a blender, combine the Greek yogurt, cold water, chopped apple, ground cinnamon, and salt if using. Blend on low speed until smooth and frothy, about 30 seconds.
Add seltzer and blend briefly
30 secPour in the seltzer water and blend for 2-3 seconds just to incorporate. Do not over-blend to keep the fizz.
Chill and serve
5 minFill four glasses with ice if desired, pour the doogh, and garnish with reserved apple slices, a mint leaf, and a light dusting of extra cinnamon. Serve immediately.

Tips
- For a smoother texture, use full-fat Greek yogurt and blend until the apple is completely puréed.
- For a boozy (non-alcoholic) kick, replace the sparkling water with lemon-lime soda, but skip the amount of sugar unless you like it very sweet.
