Guryevskaya Kasha with Caramelized Nuts

About this dish
Guryevskaya kasha is a classic Russian dessert of creamy semolina pudding, baked until golden and layered with caramelized nuts and dried fruits. Invented in the early 19th century by a serf cook Zakhar Kuzmin for Minister of Finance Dmitry Guryev, this dish became a symbol of Russian imperial cuisine.
The slow-baked semolina develops a delicate crust while staying lusciously soft inside. Serve it warm for a truly decadent treat.

Method
Prepare caramelized nuts
15 minutesIn a dry skillet over medium heat, toast walnuts and almonds until fragrant, about 3-4 minutes. Add 2 tablespoons of sugar and stir constantly until sugar melts and coats the nuts. Spread onto a plate to cool. Once cool, chop roughly.
Cook semolina pudding
10 minutesIn a large saucepan, bring milk and a pinch of salt to a gentle boil. Reduce heat to low and slowly whisk in semolina in a thin stream. Cook, stirring constantly, until thickened, about 5-7 minutes. Remove from heat.
Enrich the pudding
5 minutesBeat egg yolks with remaining sugar until pale. Gradually add a ladleful of hot semolina mixture to the yolks while whisking to temper. Then pour the yolk mixture back into the saucepan and stir. Add butter and vanilla extract.
Layer the kasha
10 minutesPreheat oven to 180°C (350°F). Butter a baking dish (about 1.5 quart). Spread half of the semolina mixture in the dish. Dot with half of the apricot jam, sprinkle half the chopped nuts and dried apricots. Cover with remaining semolina, then top with remaining jam, nuts, and apricots.
Bake until golden
35 minutesBake for 25-30 minutes until top is golden brown and slightly crusty. Let rest for 10 minutes before serving.

Tips
- For a dairy-free version, you can substitute milk with a mix of coconut milk and oat milk, but expect a slightly different texture.
- Make the caramelized nuts ahead of time and store them in an airtight container. They also work wonderfully as a topping for oatmeal or ice cream.
- Leftover kasha keeps well in the fridge for up to three days. Reheat slices in a low oven or microwave, the crust will soften but the flavor remains.
- If semolina is not available, use cream of wheat as a substitute: the results will be almost identical.
Serving suggestions
- Serve warm on its own or with a dollop of sour cream or clotted cream for extra richness. A side of fresh berries cuts through the sweetness beautifully.
