Appetizer
Queso Mahón

About this dish
Queso Mahón is the Balearic classic that turns simple ingredients into a savory, spreading delight. Originating from the island of Menorca, this soft, processed cheese spread is made by blending tangy Mahón cheese with a touch of butter and a pinch of paprika, creating a smooth, spreadable texture that's perfect for slathering on crusty bread or pairing with fresh fruit.
It's a staple in Spanish tapas bars, often served as a quick appetizer that showcases the island's dairy heritage.

Prepare the cheese
2 minutesGrate the Mahón cheese into a mixing bowl. If the cheese is very hard, let it come to room temperature for 10 minutes to soften slightly.
Cream the butter
1 minuteIn a separate small bowl, mash the softened butter with a fork until it is smooth and creamy.
Combine cheese and butter
3 minutesAdd the grated cheese to the creamed butter and mix vigorously with a fork until a thick, spreadable paste forms. If the mixture is too stiff, add a teaspoon of warm water or milk to loosen it.
Season the spread
1 minuteStir in the sweet paprika, and season with a pinch of salt and black pepper to taste. Mix until the paprika is evenly distributed and the spread has a uniform color.
Serve
1 minuteTransfer the Queso Mahón to a serving bowl or crock. Serve immediately with crusty bread, crackers, or vegetable sticks. Alternatively, cover and refrigerate for up to 3 days; bring to room temperature before serving.
