About this dish

Veg cutlet is the quintessential Indian tea-time snack: a spiced mash of potatoes and mixed vegetables, shaped into patties, crumbed, and shallow-fried until the crust shatters. It is a very practical way to use up leftover vegetables, and every home has its own version.

This recipe keeps the potato base light and adds a flavorful tempering of ginger, green chili, and garam masala, so the cutlets taste bright rather than heavy. Serve with green chutney or ketchup for a snack that disappears faster because everyone reaches for a second one.

Method

1

Boil the potatoes and vegetables

15 minutes

Wash the potatoes and pressure cook them with 1 cup water for 3 whistles, or boil in a covered pot until completely tender, about 15 minutes. At the same time, steam or blanch the green peas and green beans until soft but not mushy. Drain everything well.

2

Mash and sauté the filling

3 minutes

Peel the boiled potatoes and mash them smoothly in a large bowl. Heat 1 teaspoon oil in a pan, sauté the onion, ginger, and green chili for 1 minute. Add the carrot, peas, and beans, and cook for 2 minutes more.

3

Season the mixture

2 minutes

Add the sautéed vegetables to the mashed potatoes along with garam masala, red chili powder, turmeric, salt, coriander leaves, and lemon juice. Mix gently until everything is evenly combined. Taste and adjust the salt and spice.

4

Shape the cutlets

5 minutes

While the mixture is still warm but cool enough to handle, divide it into 8 equal portions. Roll each into a smooth ball, then flatten into 3/4 inch thick patties. Work with lightly greased palms to keep the mixture from sticking.

5

Prepare the coating

3 minutes

In a small bowl, whisk the all-purpose flour with the water and a pinch of salt to make a thin, lump-free slurry. Spread the breadcrumbs on a plate. Dip each cutlet into the slurry, then press it into the breadcrumbs to coat both sides evenly.

6

Shallow fry until golden

6 minutes

Heat the oil in a wide frying pan over medium heat. Place the cutlets in a single layer, without crowding. Fry for 2 to 3 minutes per side until the crust is deeply golden and crisp. Drain on paper towels.

Tips

  • Dry the boiled vegetables well before mashing, excess moisture makes the patties fall apart in the pan.
  • Chill the shaped cutlets for 20 minutes if you have time so they hold together better during frying.
  • For a crispier crust, use crushed cornflakes or panko breadcrumbs, which are lighter and crunchier than regular breadcrumbs.
  • To make the snack ahead, coat the raw cutlets and freeze on a tray, then fry straight from frozen, adding a minute of cooking time on each side.

Serving suggestions

  • Serve hot with green chutney, tamarind chutney, or ketchup., Pair with masala chai for an evening snack.
  • Wrap in a soft pav or burger bun with onion rings and chutney to make a quick veg cutlet burger.
  • Serve alongside a simple salad of cucumber and tomato for a light meal.
