In a blender or food processor, combine the mint, cilantro, ginger, garlic, green chilies, and lemon juice. Blend into a smooth paste, adding a splash of water if needed.

Mix marinade with yogurt and spices

In a large bowl, whisk the yogurt until smooth. Add the green paste, cumin powder, coriander powder, garam masala, salt, and oil. Mix well to form a cohesive marinade.

Marinate the paneer and vegetables

Gently fold the paneer cubes, bell peppers, and onion into the marinade, ensuring every piece is well coated. Cover and refrigerate for at least 1 hour, or up to 4 hours for deeper flavor.

Skewer the ingredients

If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the paneer, peppers, and onions onto the skewers, alternating colors for a beautiful presentation.

Preheat your grill to medium-high or set your oven to broil. Place the skewers on a lightly oiled grill grate or a baking sheet lined with foil.

Grill the skewers for 8-12 minutes, turning occasionally, until the paneer is lightly charred and the vegetables are tender. If broiling, cook for 5-7 minutes per side.

Finish with a sprinkle of chaat masala
