Pad Kra Pao Gai: Thai Holy Basil Chicken with Crispy Fried Egg
Original name: Pad Kra Pao Gai (Holy Basil Chicken)

About this dish
Pad kra pao gai is the sizzling, aromatic stir-fry you'll find on every corner in Thailand, from Bangkok street carts to late-night family kitchens. Holy basil (kra pao) gives this dish its signature peppery, clove-like punch, while bird's eye chilies and garlic create a fragrant heat that clings to tender minced chicken.
Served over jasmine rice and topped with a crispy fried egg, it's a complete meal that comes together in about 20 minutes. This version stays true to the classic holy basil chicken, with just enough sauce to glaze the meat without drowning it.

Method
Cook the jasmine rice
15 minutesRinse the jasmine rice until the water runs clear, then cook according to package instructions or in a rice cooker. Keep warm while you prepare the stir-fry.
Prepare the aromatics
5 minutesUsing a mortar and pestle or a chef's knife, roughly pound or chop the garlic and Thai bird's eye chilies together into a coarse, fragrant paste. Set aside.
Mix the sauce
2 minutesIn a small bowl, stir together the oyster sauce, fish sauce, dark soy sauce, sugar, and water (if using) until the sugar dissolves. Set near the stove.
Heat the wok
2 minutesPlace a wok or large skillet over medium-high heat and add 1 tablespoon of the neutral oil. Swirl to coat the pan and heat until it shimmers but does not smoke.
Stir-fry the chicken
4 minutesAdd the chopped chicken to the hot wok in a single layer. Let it sear undisturbed for 1 minute, then stir-fry until it is mostly cooked through and lightly browned, about 3–4 minutes. Transfer the chicken to a plate.
Bloom the aromatics
1 minuteAdd the remaining 1 tablespoon of oil to the wok. Add the garlic-chili paste and stir-fry until highly fragrant, about 20–30 seconds. Do not let it burn.
Combine and glaze
2 minutesReturn the chicken to the wok. Pour in the sauce mixture and stir-fry for 1–2 minutes, until the chicken is fully cooked and the sauce thickens into a glossy glaze.
Wilt the holy basil
1 minuteTurn off the heat, add the holy basil leaves, and toss just until they wilt and release their peppery aroma, about 20 seconds. The residual heat is enough.
Fry the eggs
5 minutesIn a separate small pan, heat a thin layer of oil over medium-high heat. Crack in the eggs and fry until the whites are crispy at the edges and the yolks are still runny, about 2–3 minutes per egg. Work in batches if needed.
Assemble and serve
2 minutesSpoon the holy basil chicken over bowls of warm jasmine rice. Top each with a crispy fried egg, extra holy basil leaves, and sliced chilies if you like. Serve immediately.

Tips
- Holy basil is the soul of this dish, if you can't find it, Thai basil will work, but the flavor will be sweeter and more anise-like rather than peppery.
- Pound the garlic and chilies together rather than mincing them separately—this bruises the aromatics and releases more fragrance into the oil.
- Keep your wok very hot and don't overcrowd it, if your pan is small, cook the chicken in two batches to get a proper sear instead of steaming.
- The fried egg is non-negotiable in Thailand—it's called kai dao, and the crispy edges are meant to soak up the sauce.
Serving suggestions
- Serve with jasmine rice and a crispy fried egg on top.
- Add a side of sliced cucumbers and a squeeze of lime for freshness.
- Pair with a simple Thai-style clear broth or tom yum for a complete meal.
