Method
Prepare the sauce base
5 minutesIn a small bowl, whisk together the eggs, evaporated milk, coconut milk, yellow curry powder, fish sauce, sugar, and lime juice until smooth. Set aside.
Stir-fry aromatics
1 minuteHeat a wok or large skillet over high heat until smoking. Add the cooking oil, then garlic and optional chilies. Stir-fry for about 20 seconds until fragrant but not brown.
Add the crab
3 minutesAdd the cleaned and cracked crab pieces to the wok. Stir-fry for 2-3 minutes, tossing frequently, until the shells turn bright red and the meat is just cooked.
Pour in the sauce
5 minutesGive the sauce mixture a quick whisk, then pour it over the crab. Reduce heat to medium and gently stir to coat. Continue cooking, stirring occasionally, until the sauce thickens and clings to the crab, about 4-5 minutes. The eggs will create a silky, curd-like texture.
Finish and serve
2 minutesOnce the sauce is thickened, remove from heat. Fold in half the sliced spring onions. Transfer to a serving plate, garnish with remaining spring onions and fresh cilantro. Serve immediately with steamed jasmine rice.
