Kuzu Güveç with Vegetables: A Traditional Turkish Lamb and Vegetable Stew
Original name: Kuzu Güveç with Vegetables

About this dish
Kuzu güveç is a cornerstone of Turkish home cooking, a slow-simmered lamb and vegetable stew named after the earthenware pot (güveç) in which it is traditionally cooked. This version honors the classic method from Central Anatolia, where lamb is gently braised with eggplant, potatoes, tomatoes, and peppers until the vegetables melt into a rich, savory sauce.
The result is deeply comforting yet surprisingly light, perfect for soaking up with crusty bread or serving over rice pilaf. Like many Turkish dishes, it tastes even better the next day.

Method
Prepare the ingredients
PT15MPat the lamb cubes dry with paper towels and season with salt and pepper. Cube the eggplants, potatoes, and peppers, chop the onion, and mince the garlic. Grate the tomatoes.
Brown the lamb
PT10MHeat 2 tablespoons of olive oil in a large skillet or Dutch oven over medium-high heat. Add the lamb in batches and brown on all sides, about 4–5 minutes per batch. Transfer to a plate.
Sauté the aromatics
PT5MIn the same pan, add the remaining 1 tablespoon olive oil. Add the onion and cook until softened, about 3 minutes. Add the garlic and tomato paste and cook for 1 minute more, stirring.
Layer the güveç pot
PT5MIf using an earthenware güveç pot, transfer the onion mixture to the bottom. Otherwise, use the Dutch oven. Layer the browned lamb, then the eggplant, potatoes, peppers, and grated tomatoes. Pour in the hot water. Season with salt and red pepper flakes, if using.
Bake the stew
PT1H10MCover the pot with its lid (or foil) and place in a preheated oven at 180°C (350°F). Bake for 45 minutes. Remove the lid and bake for another 20–25 minutes, until the lamb is tender and the vegetables are cooked through and the sauce has thickened slightly.
Rest and garnish
PT10MLet the stew rest for 10 minutes before serving. Garnish with fresh chopped parsley.

Tips
- Use lamb shoulder or leg for the best texture, these cuts become tender and flavorful after slow cooking.
- If you don't have an earthenware güveç pot, a heavy Dutch oven works perfectly and distributes heat evenly.
- For a deeper flavor, brown the lamb well before adding the vegetables, this builds a rich base for the stew.
- This dish tastes even better the next day, so feel free to make it ahead and reheat gently.
Serving suggestions
- Serve with crusty bread to soak up the juices., Pair with rice pilaf or bulgur pilaf.
- Accompany with a simple shepherd's salad (çoban salata).
