Mướp xào is a refreshing Vietnamese stir fry that showcases the delicate, slightly sweet flavor of loofah (also known as luffa or sponge gourd). This quick weeknight dish, popular in northern Vietnam, gets a golden turmeric glow and a subtle crunch from shallots.
Finished with a drizzle of premium fish sauce, it's light, aromatic, and pairs beautifully with steamed jasmine rice.

Method
Prepare the loofah
5 minutesPeel the loofah (luffa) with a sharp vegetable peeler, removing the fibrous outer skin completely. Trim off the ends. Cut the gourd into bite-sized half-moons, about 1/4 inch (6 mm) thick. If the loofah is large and has developed seeds, remove the spongy centre containing the seeds with a small knife. Rinse under cold water and drain well.
Prepare the aromatics
2 minutesPeel and thinly slice the shallot. Set aside. In a small bowl, whisk together the turmeric powder, sugar, fish sauce, and water until the sugar dissolves completely.
Stir-fry the shallots
1 minuteHeat a wok or large skillet over high heat until smoky. Add the neutral oil and swirl to coat. Add the sliced shallot and stir-fry for 30 seconds, until fragrant and beginning to turn golden.
Cook the loofah
4 minutesAdd the loofah pieces to the wok in a single layer if possible. Toss gently to coat with oil. Pour the prepared sauce mixture over the top. Stir-fry for 2 minutes, then cover with a lid and cook for 2 more minutes, or until the loofah is tender but not mushy. The color will turn vibrant and the pieces will become slightly translucent.
Finish and garnish
1 minuteRemove the lid, add a generous grind of black pepper, and toss in the sliced spring onions. Stir for 10 seconds, then transfer to a serving plate. Garnish with fried shallots if using. Serve immediately with steamed jasmine rice.

Tips
- Choose loofahs that are firm and heavy for their size, the skin should be a light green with no brown spots. Younger loofahs have thinner skins and fewer seeds.
- If you can't find fresh loofah in your area, Chinese okra (angled luffa) or even zucchini can be substituted, though the texture will be slightly different.
- To keep the loofah from turning watery, make sure your wok is very hot before adding the oil and cook uncovered for the last minute to let steam escape.
- For a non-vegetarian variation, add 100g / 3.5 oz of peeled shrimp or thinly sliced pork belly along with the shallots at step 3.
Serving suggestions
- Serve mướp xào over a bowl of steamed jasmine rice, with a side of fresh herbs like cilantro and a wedge of lime. It also pairs well with grilled fish or tofu for a light summer meal.
