About this dish

A delicate, aromatic soup from Burma featuring silky homemade chickpea tofu and tender shrimp in a light, savory broth. The subtle heat of black pepper and fresh herbs balances the natural sweetness of the shrimp, creating a comforting yet vibrant bowl.

Thiri Tun shares her secret: letting the tofu rest overnight for the perfect texture.

Method

1

Make the chickpea tofu

5 minutes active, plus chilling

In a medium pot, whisk together chickpea flour, water, turmeric, and salt until smooth. Bring to a gentle simmer over medium heat, stirring constantly with a wooden spoon, until the mixture thickens and pulls away from the sides, about 5 minutes. Pour into a rectangular dish and smooth the top. Let cool to room temperature, then refrigerate for at least 1 hour or overnight until firm.

2

Slice the tofu

2 minutes

Once firm, invert the tofu onto a cutting board and cut into 2.5 cm (1-inch) cubes. Set aside.

3

Sauté aromatics

1 minute

In a large pot, heat a splash of oil over medium heat. Add minced garlic and grated ginger, and sauté for 1 minute until fragrant.

4

Add broth base

3 minutes

Measure 2 cups (480 ml) of water into the pot. Stir in fish sauce and black pepper. Bring to a low boil.

5

Cook the shrimp

3 minutes

Add the shrimp to the boiling broth and cook until they turn pink, about 2-3 minutes. Do not overcook.

6

Combine tofu and coconut milk

5 minutes

Gently slide in the tofu cubes and pour in the coconut milk. Stir carefully to avoid breaking the tofu. Let simmer for 5 minutes to heat through.

7

Serve

1 minute

Ladle the soup into bowls. Garnish with fresh cilantro, lime wedges, and sliced red chili if desired. Serve hot.

Tips

  • For a firmer tofu, let it chill overnight in the fridge, the texture becomes more like firm silken tofu.
  • If you can't find chickpea flour, you can buy besan at Indian or Asian grocery stores.
  • Adjust the amount of black pepper to your heat preference.
  • Burmese cuisine favors a prominent pepper kick.
  • The soup is best served immediately, but the tofu can be made a day ahead to save time.

Serving suggestions

  • Serve this soup with steamed jasmine rice or Burmese pickled tea leaf salad for a complete meal. A squeeze of lime just before eating brightens all the flavors.
